Carmelized Pears - EASY!


After you've finished grilling those Brats or BBQ'ing the chicken, use the coals to make an EASY but delicious, healthy dessert, that cooks while you enjoy your dinner.
Grilled Carmelized Pears:
Take 5 pears, any kind (or as many as you need), and cut them in half, top to bottom.  Cut the core out of each half.  Put aluminum foil down on the grill, and as it warms up, coat it with butter-flavor Crisco (or the regular kind - they both work).  Make sure you have enough foil so you can fold it back on itself halfway; and DO coat the whole thing.  Then sprinkle on cinnamon-sugar, a nice coating of it - so you almost can't see the foil through it.  Then lay the pears on the cinnamon-sugar, cut side down.  Sprinkle more sugar mix on top of the pears (the skin side), fold the foil over top, and crimp the edges a bit.  The coals were running about 225 degrees at this point, and I left the pears on for about 30 minutes.  When you finish your dinner, you'll have soft, warm, caramelized pears just begging for a scoop of vanilla ice cream!  ENJOY!

Vegan Vanilla Ice Cream

I have tried several Vegan ice creams, and even made my own recipes (early on in the learning process).  They were edible - which is fairly impressive - but NOT good.  When we discovered my daughters food allergies a few years ago, she took the news with grace and style.  She had just turned 13 at the time, and to be told that you suddenly can't have chocolate, enjoy quiche and cheeses...  I don't know if I could have handled it so well.  But I'm not afraid, so I jumped right in and started cooking "vegan" dishes (that was the easiest way to search).  I can add meat to anything, but the best way to find the allergy requirements is to go to Vegan sites.  This ice cream - EVERYONE LOVES IT!  It is creamy, tasty, it freezes nicely, melts with the same speed and texture as dairy ice cream...  It really is perfect!  I did the cashew base, and it was a vanilla ice cream; but my two older kids - who didn't watch me make it - did not know the base.  When they tasted it, they immediately named the flavor I couldn't quite put my finger on:  COOKIE DOUGH.  Yep, for us - going the cashew route - the final product had a distinct Cookie-Dough Ice Cream flavor.  And BTW, I used it the first time as the special dessert for my daughter's birthday, and served it with Grilled Carmelized Pears  (I posted the directions on my blog).  It was soooooo  delicious.  My husband, who doesn't have much of a sweet tooth, had seconds!  So thanks for this recipe - if you want Vegan ice cream that is fabulous, and hate the exorbitant prices for a little container that will NOT be as good, make this recipe.  Follow it, and life will be sweet!

A day filled with special moments...

So this was one of those boring, nothing really happening days that surprised me and had several memorable moments.  Hans had a PFT (pulmonary function test) at the hospital this morning, as a precaution and to rule out asthma.  It went well, and we weren't overly concerned, but it's best to check.  (As a singer, I know a thing or four about breathing, and hunching over and moving your shoulders does NOT help breathing.  I'm thinking it's a posture issue!)  So we had breakfast after, eating sandwiches in the park before he went to school, which was lovely.  But THEN he came home and announced that his teacher asked him to stay after for a moment, and she wanted to know if Hans would be interested in running for 7th grade STUDENT COUNCIL PRESIDENT!!!  AHHHHHH!  I'm so proud - really!  He was SO committed last year and hardly missed a meeting, I know he'd make an amazing president!

Then Bethany came home after school...  I was on the back porch taking a break, eating my lunch, and she came outside with her snack, and we hung out for some time.  We were just talking, and she had me help her study for her French quiz, and it was just ... wonderful.  It was so relaxed, and we were enjoying spending time together (and she's really good at French)...  I know that sounds kind of boring, but it was a wonderful, memorable mother/daughter moment.  Relaxing in the sunshine, together.

And Josh was a HUGE help today.  We ended up spending several hours pulling ivy out of the back yard; I started wanting a small spot to put my new firewood rack (away from the house), but we cleared quite a bit - and I wouldn't have gotten that far without him!  OH - and say a prayer or just keep him in your thoughts, because Thursday he goes for his driving test!  Watch out, Philly - there's an actual good driver about to take to the roads!  (This area has the WORST drivers ever!)

So it was a really nice day, and I appreciated Cody picking up Josh tonight from class, and now I'm done.  Seriously - I HATE that ivy, and it totally kicked my butt today.

Oh yeah!  I almost forgot; here's a picture of our newest addition, Tyler!  We adopted her for free, and Bethany is her 'mommy', but she is very lovable and social!  We're very happy to have her!  (And unlike Toffee, she isn't agoraphobic, but she sticks to the second and third floor, unless we're all hanging out downstairs.  Then she'll come down and see us.)

"Power Surge"

Bethany is making a video series titled "Power Surge".  It's an internet/youtube series based on the modern day Greek gods and goddesses, and she's filming the entire thing herself.  She has props, voices, and she's using her Littlest Pet Shop cats as the characters.  (You can see quite a few other series using LPS characters on youtube - they're kinda impressive!).  So I don't have a preview yet (she's hoping to release a trailer within a week, and has Episode 1 ready to go), but Bethany said I could blog about a little bit...  I wrote the original soundtrack theme song, Power Surge, so you can take a listen if you like!  It's not completely finished (the MIDI keyboard I ordered was a bust so I have to order again), but she likes it and says it's good enough for the trailer, so...

Long time, no see...

WOW!  There is so much to catch up on, I think it might be easier to work backwards from today!

For starters, Hans now has braces.  It's been a tough week for him, since they put rubber band spacers between his teeth for a week, and then yesterday the braces went on.  And of course they had to redo one bracket that didn't attach, and he has these "turbo's" behind his 2 front teeth to help him adjust his overbite.  But he still looks cute!  (With new glasses, too).    

Then this past weekend, we went river tubing on the Reading River.  It was a beautiful day, but not overly hot - which meant the water was a little 'cool'!  And I (of course) forgot to grab my waterproof camera from Boo (she's using it to make her movies), so we only have the pictures as we got in the water, but it was really relaxing.  There were just enough spots where the river had baby rapids, to make the experience just a bit exciting...

 

The week prior to that (18-22), Cody flew out to Mesa, AZ, on Sunday, and then spent the next four days flying an aircraft back across the country.  Imagine driving across country, but you only get to stop  twice a day (lunch for gas, and then overnight to sleep), with no pit stops and your thousands of feet above the ground.  It was very exhausting!

Finally, Saturday night before Cody left, we went to Longwood Gardens for the Fountains & Fireworks show with music from Elton John.  It was the event we were supposed to have done for Cody's birthday, but there had been a fireworks malfunction at the time, so this was rescheduled.  It was nice, but Hans wasn't feeling that great, and we waited WAY too long after dark for the show to start.  It was lovely, but one of those events that if you've seen it once, you're good.  Here's some of that afternoon...

Bethany's dance!

Tonight was the 8th Grade Dance, and I'm so proud of Bethany for going!  I kind of 'forced' her to go, and even though she went under duress, she had a nice time.  Maybe not a spectacular time, but she enjoyed herself, looked like a princess, and was brave and daring!  I told her not to worry... I remember my 8th grade dance, and it was AWKWARD!  And I had a date.  (Part of it was the dress - she looked amazing, but she said she didn't know how you could dance to hip-hop and rock in a nice dress.  Makes sense!).

Most of all, I'm proud of her for going, and - more importantly - going with a positive attitude and open mind.  But I'll let the pictures tell the story!

Bethany's 8th grade trip

Wow.  Every time I turn around, Norwood school is doing some amazing thing for it's students again.  This time, the whole 8th grade class went to Hershey Park.  Wow, right?  Bethany said she had a wonderful time; she rode the Wild Mouse roller coaster 6 times in a row when they first arrived, since there was hardly a line.  And she rode some rides with different friends, and spent hours enjoying the waterpark area!  She was so good - she didn't get burned because she used the sunscreen, she watched what she ate (for her sensitivities), and even took her supplements when she needed to.  What an amazing young woman!  So tonight I made her download the pics so I could share them with you all.

So many things going on!

So I should update everyone on a few things:

On March 7th, Josh was inducted into Phi Theta Kappa at Delaware Community College.  We are SO proud of him; he's doing well in school, working hard, and at the same time trying to start a Martial Arts Club for the college.  He's almost there!  And speaking of martial arts, last night (18th) at his Kosho class he was given the purple belt promotion on merit!  Why, you ask?  Because this weekend - at a seminar - he displayed a Kata that HE made, on his own, in front of several Sensei's and Masters.  They were so impressed, he was promoted - WOW!  Here's some pics...

To wrap it up with Josh, his friends - Teron and Alex - invited him to an Eagle Scout celebration last weekend.  Josh played 'fashion designer' and they all looked so good, I had to get a picture.  I'm so grateful that Josh is finding friends who are smart, responsible, and have good morals/ethics.  It's nice to see!








Bethany has been working hard at school - she got A/B Honor roll (and we are going on a date soon) - and also hard at Lacrosse.  YEP!  From Field Hockey to Lacrosse, she's running another field, and constantly surprising me with her willingness to try new things.  Especially sports!

That's her in the dark outfit - it is March, after all!  This was their first practice, and she was doing great her first time out!


She also went to a birthday party for a girlfriend, and we took Vegan doughnuts so she could have a 'cake' thing.  They were a big hit, she had a great time, and she was the only one with me the next day for church (I had cantored the Sat. mass).  So she went with me to Michaels, and ... well, look what she did in the store!

The next day Hans and I finished making the doughnuts while Boo was at LAX practice.  They really were delicious, and disappeared in short order.

 
         

And since Hans got A/B Honor roll as well, he too wanted to go to the movies, so we saw Oz the Great and Powerful.  It was good, but I was disappointed since they clearly designed it to be seen in 3D, and I hate paying the extra for what is usually an unimpressive 3D experience.  But he liked it - and I made him take a picture before we went in.  He's the pig monster...

AND lastly, his artwork was in the County art festival.  Well, as he said:  "everybody's art is in the show", but I'm still proud!  Here's his... (bottom right)



I guess that catches us up.  Cody is working late now, and next week I should be starting the tear-down on the kitchen with our sub-contractors.  YES!!!!  Finally, an enclosed, WARM kitchen.  I'm so excited!

Breakfast for mom...

This weekend Hans and Bethany had a "be good to Mommy" morning and made breakfast for me!  Everyone enjoyed it, but they made it especially for me;  Hans was in charge of the table and decorations (and supposedly had the idea), and Bethany had a recipe she wanted to try, so she made the food.  It was a Blueberry Shortcake recipe, which she made Vegan, and it was AWESOME!  Plus Hans made origami swans, with blue water for them to float on, and a couple of lotus flowers.  It was really lovely, and incredibly thoughtful!  The swans didn't make it - not enough crayon on them - but we fixed up a lotus flower really good, and it will float for a while.  Thank you, kiddos!

This was SO delicious - a restaurant quality breakfast treat.  We all loved it!

Chicago

So, as far as travel, this was the worst experience ever.  We had hours of delays, bad weather, bad turbulence, and even a cancelled flight.  We finally got back home Tuesday, the 26th, and Hans was under the weather.  It was a stressful weekend, and I think the lack of sleep and motion sickness got to him as well.  (He got sick Tuesday evening, but that was it - I kept him home on Wed. to make sure, though).  Monday I took him to the Dr's, and overall he was fine (low grade fever), but I've been getting him to bed earlier and just getting back up to speed.  He's doing much better now!

Bethany was great - they were both troopers, and Monday night she got to have a suite at the hotel all to herself!  She LOVED it...  It was an overwhelming experience in general, but we got there and back safely, and I was grateful that I was there for Hans at the prayer gathering (at the wake), since he broke down during that (a little).

Overall, for me, this was an awful experience, one I will not ever repeat.  Cody was kind enough to let me buy last minute plane tickets for 3, hotel for the weekend, and a rental car, just so Bethany and Hans could be with their grandmother, dad, and family - to give and receive support during this time.  I wasn't told until AFTER we arrived, that - on his death bed - their grandpa still harbored such hate, venom, and a lack of forgiveness for me, that I wasn't even allowed to take the kids up to the door.  Tante Bridgette and Debbie were the only 2 people to acknowledge me on their own, and after the prayers at the wake I was told to leave.  (I made sure Hans and Bethany were okay, but since they were, I left quietly).  The kids' family - NO ONE - even looked at me at the funeral, and their grandmother didn't even acknowledge my presence.  NOT ONCE.  Not even to thank me for bringing her grandchildren to see her.

So, I've heard a few worse stories about families since then (and so I have other people to pray for who have it worse than me), but I am   D O N E.   Cody and I have paid for tickets for the kids in the past (because it was important that they see their other family), we've give the Schumachers financial support - LOTS - in the past (even when their own children wouldn't give them money), a fact they hid from 'grandpa' because he would be SO angry to know we gave them money...     And I'm just finished.  Having to listen to them talk about this kind, loving, forgiving man at the funeral:  who were they talking about?  Because the deceased man that had all these people coming to say goodbye had such a deep, poisonous hatred, that over TEN YEARS LATER people who had no business judging me were gossiping and hating me at a funeral!    Instead of supporting each other, the hate he left behind filled the rooms.  Ugh.  What sad hearts they must have; filling them with hatred for someone (me) they hardly know, who did nothing to them.  Seriously - John and I were married; no one else.  And Cody is perhaps the only person who really knows how bad that marriage was.  My marriage to John ended the day I brought Bethany home from the hospital, and a grown man - now a father - had left our home in such horrid disarray, I thought we'd been burglarized.  After months in a hospital, an emergency C-section, Bethany in NICU for a week, to come home to a house like that...  Anything left in me had broken then.  And 6 months of severe Post-partem depression after and one suicide attempt, and NO help from him?  He nailed the casket shut on our marriage.  So there's some insight into that.  I should have ended us some other way, but at that point I was struggling to hang on to my sanity, and care for everyone by myself.  Including John, who - if you remember - had broken his leg on a jump.  So I was caring for EVERYONE, and working 13 hours, plus weekends, and our asshole commander and first sgt. were NOT helping like they promised, they were making my life harder.  And no one helped me get through that.

Folks, I'm a sinner.  Have done some awful things in my life, and to others lives.  I have never said otherwise.  And I know my ex-father-in-law hated me, and that was fine.  It was a narrow-minded approach to things he didn't understand, but I didn't care.  But to see that infect others?  <shaking head>  That is so sad.  All the horrible things I've done in my life, all the horrible things done to me, all those experiences...  they have made me who I am today.  And I try - everyday - to be a better person.  To try my best not to judge.  To struggle to be understanding and caring of others needs.  To teach my children to WAIT, WAIT, WAIT for the right person.  I am a poster child for "don't get married too soon", and if that means that my experiences will keep my children from making some of my crappy mistakes, then it was worth it.  And if they make some of the same mistakes?  I'll be here to help pick them up.  Because that's how I choose to be - the one who learns from her mistakes, tries her damnedest not to repeat them, and to make life a little better for the next person.

So the good news?  I'm working on forgiving them (my anger is tripping me up a little, but just a little - I'm almost over it), and getting my loving family back on track to improve the rest of the year.  It's been a rough year thus far, but we'll get better!  And just in time for the snow storm!

On the plane

Yesterday, Bethany, Hans and I FINALLY made it to Chicago.  We had about a 4 hour delay in Cincinnati, but God must've heard my prayers because we made it!  I'm so grateful; and today they are hanging out with family, hopefully having a great time with Oma and their cousins.  Here's what the flight looked like yesterday...

Love and other heartaches...

Bethany, Hans and I are off to Chicago tomorrow for Opa's funeral. He passed away Wednesday morning, after a lengthy duration of dialysis and a life of living with diabetes. I only mention this because now – for those of us who know he's in heaven – he will have an eternal life free of pain, with his mother and brother, and all his other family. It's still sad; I told Bethany and Hans that losing a loved one is – possibly – the most difficult thing to do in life. For most of us, we're never ready to say goodbye; even when it means a better life for that person. It's the selfish side of love; well, there are many selfish sides to love, but this one is bittersweet, and comes from a caring part of our hearts.

On the brighter side, we are extremely grateful Obachan is recovering nicely, and that God was watching over her when she needed help (and Richard and Michelle, too – what an amazing daughter!). This year has started off rather rough; people in the hospital, hospice, passing away – sickness and death. But for all those hard things we've had to deal with, so many have been miraculous blessings. My sister had a cancer scare that turned out to be a poorly read mammogram; thank you, God! Josh got terribly sick a couple weeks ago, gave it to Cody and I, but Bethany and Hans were spared – AMEN! Whoohoo!!! Obachan got the medical help she needed right away, and is recovering... how wonderful!

I apologize if this sounds a little 'preachy' (the AMEN; too much??), but it's important to remember all the things we have to be grateful for, and every one of you reading this is someone I'm grateful to have in my life. So I'll be thinking of you, sending a little prayer of love out to you, and smiling inside as I pack a black outfit to say goodbye. Because love never really leaves – it just changes location.

Skiing Shawnee

We had a great day today - a nice family day we've needed to 'reconnect'. We took our time with the trip itself... Slept in a little, packed up the car, then had nice breakfast at Cafe 11 before we hit the road. Bethany and Hans napped on the drive up here, and then we checked in, had some lunch and got settled. Finally, we hit the slopes, and the powder was awesome! Came back to the resort for some dinner and a movie, and then Cody and I got to do some night skiing; it was like a date! And now everyone is exhausted. Goodnight...

 
  I wanted it to look like I was running into the tree, but - as Josh pointed out - it looks like I'm singing.  A skiing musical?  Could be!
