Carmelized Pears - EASY!

After you've finished grilling those Brats or BBQ'ing the chicken, use the coals to make an EASY but delicious, healthy dessert, that cooks while you enjoy your dinner.
Grilled Carmelized Pears:
Take 5 pears, any kind (or as many as you need), and cut them in half, top to bottom.  Cut the core out of each half.  Put aluminum foil down on the grill, and as it warms up, coat it with butter-flavor Crisco (or the regular kind - they both work).  Make sure you have enough foil so you can fold it back on itself halfway; and DO coat the whole thing.  Then sprinkle on cinnamon-sugar, a nice coating of it - so you almost can't see the foil through it.  Then lay the pears on the cinnamon-sugar, cut side down.  Sprinkle more sugar mix on top of the pears (the skin side), fold the foil over top, and crimp the edges a bit.  The coals were running about 225 degrees at this point, and I left the pears on for about 30 minutes.  When you finish your dinner, you'll have soft, warm, caramelized pears just begging for a scoop of vanilla ice cream!  ENJOY!

(Thanks to stresscake.wordpress.com for the photo - everyone ate mine so quickly, I couldn't get a good picture, but that's exactly what they looked like!  Next time...)

Long time, no see...

WOW!  There is so much to catch up on, I think it might be easier to work backwards from today!

For starters, Hans now has braces.  It's been a tough week for him, since they put rubber band spacers between his teeth for a week, and then yesterday the braces went on.  And of course they had to redo one bracket that didn't attach, and he has these "turbo's" behind his 2 front teeth to help him adjust his overbite.  But he still looks cute!  (With new glasses, too).

Then this past weekend, we went river tubing on the Reading River.  It was a beautiful day, but not overly hot - which meant the water was a little 'cool'!  And I (of course) forgot to grab my waterproof camera from Boo (she's using it to make her movies), so we only have the pictures as we got in the water, but it was really relaxing.  There were just enough spots where the river had baby rapids, to make the experience just a bit exciting...

The week prior to that (18-22), Cody flew out to Mesa, AZ, on Sunday, and then spent the next four days flying an aircraft back across the country.  Imagine driving across country, but you only get to stop  twice a day (lunch for gas, and then overnight to sleep), with no pit stops and your thousands of feet above the ground.  It was very exhausting!

Finally, Saturday night before Cody left, we went to Longwood Gardens for the Fountains & Fireworks show with music from Elton John.  It was the event we were supposed to have done for Cody's birthday, but there had been a fireworks malfunction at the time, so this was rescheduled.  It was nice, but Hans wasn't feeling that great, and we waited WAY too long after dark for the show to start.  It was lovely, but one of those events that if you've seen it once, you're good.  Here's some of that afternoon...

Hans' birthday party!

Only ONE kid couldn't make it to Hans' party - that is a record!  We used to have an issue getting anyone to come to a party in NC.  So he wanted to have it at this Ice Works skating rink, and it was really nice.  Everyone had pizza and drinks, we went skating (I gave the newbie's a lesson), opened presents, and had plenty of quarters for the kids to play around in the arcade.  PLUS, per Hans' request, I made a carrot cake for him.  A VEGAN carrot cake.  It was amazing!!!  No one would know it was vegan; it was that good!  And of course we had to do it up as OmNom, one of the cutest characters ever, and that looked great as well.  Cody, Bethany and Josh really stepped up and helped me out getting everything ready for the party.  I am so grateful for their help, and everybody seemed to have a great time!

Now if my stupid tooth would stop aching.  Ah, thank God for Valium.  And Vicodin.  Whichever is working right now...

Love to all - and Happy Birthday Hans!

Happy Birthday, Hans!

So 12 years ago today, my youngest son was born - it was not the easiest of births (though Bethany always wins that competition), but he sure was a beautiful baby boy.  Since that day he's just gotten cuter and more amazing to me!  His sense of humor is well-developed for a young man of 12, his smile is just dazzling, and I'm happy to say he inherited my mojo.  But most of all, I'm amazed to watch my children grow up into these new people that didn't exist before, and now they're here - and I'm helping to make that happen.  It is SO cool to be a part of that!  Watching Hans blossom into a strong, grounded leader - the kind of person others will be able to count on - and still maintain a great attitude and wonderful outlook on life is one of the great joys in my life.  I love you, so much, Hans.

HAPPY BIRTHDAY!

Happy Birthday, Cody!

Today Cody turned 37, and we had a really great day!  He woke up to decorations and gifts in the Living room/Kitchen, and Josh and I took him out to lunch at this GREAT Indian restaurant, Shere E Punjab.  We stuffed ourselves - seriously.  This afternoon I finished his last gift, while Bethany and Josh rode over to the store and she got him a new dress shirt.  Tan, just the color he loves.  Meanwhile I baked him a Vegan/non-soy birthday cake with lemon icing; it was REALLY lemony and tangy.  I also attempted chocolate vegan ice cream, and this came out much better than last time (although I had to stir by hand, since the mechanism on our maker broke.)

Finally, I grilled a New York Strip and a Sirloin steak (delish!) along with some corn on the cob and a salad.  We had a really relaxed dinner, opened presents, and then played some darts with the magnetic game I got him.  (It's double sided...  the kids played darts, but they aren't allowed to use the other side. Adults only!  wink wink!)

So it was a really nice birthday.  Cody seemed to enjoy himself and relax, and eat lots of great food, and overall be adored.  As he should be every day.  And thanks Mom and Dad for calling him tonight to wish him a happy birthday; it means a lot to both of us in our own ways.

Love to all...

Happy Birthday to ... ME!

So, I turned 41 today...  Not really a milestone.  More like wet sand in my underwear.  Annoying, but it will go away soon.  (The annoyance - not the age.  Darn.)

It was a laid-back day, taking the kids to school, running errands; Cody joined Josh and I for lunch, and I spent the afternoon helping Hans with the last of his school project.  Plus today was Bethany's day to have peanuts reintroduced into her diet, so I made Buckeye Bars for everyone to enjoy.  (They're the lazy version of Buckeye's - I spread the peanut butter in a lined pan, then pour the chocolate on top and cut into bars once the chocolate is set.  Delicious AND easy!)

Cody and the kids got me WONDERFUL presents, and most of them were inexpensive (which I love!).  Cody got me a really nice pair of silicone oven mitts (red) that I needed; my other ones were so old, there were thin parts that would get me burned.  And fun!!! new toys for my camera!  An awesome 5-in-1 foldable reflector, and some lovely lens filters.  I am so excited!  Bethany got me a beautiful autumn leaf candle, some Papaya scented tea lights (for the christmas gift she got me), and a bag of coconut M&M's.  Yum.  (And a dollar from Hans - I won't spend it all in one place!)

And thanks to mom and dad for the beautiful shirt (purple) and lovely scarf from Italy, with the crocheted edging (also purple)!  I got a lot of calls from everyone wishing me a happy birthday; so I need to return calls, but know that I appreciate all the well wishes!

Have a great weekend - love to all!

Bethany's birthday

Swimming with Bethany, and had a lovely celebration at home. She had plenty of presents and fun things to get, and got to spend time with family. We really missed her on her birthday, but hopefully this made up in some small portion.

Love to all...

Happy Birthday Hans!

More celebrating today - starting with lunch after church, where Cody joined us.  (He had been working, but finished early today).  Then a bike ride to the park for frisbee and fun, followed by a movie and popcorn at home.  Then another ride down to Norwood park, since the weather got beautiful while we were inside.  A wonderful family day overall, and thanks to everyone who called to wish Hans the best!

Here's Cody at the park...

Bowling

We're starting the celebration for Hans' birthday tomorrow. So we went bowling, then out for dinner, riding our bikes the whole way! It was a great day! Now Bethany is at a black-light birthday party until 11:00. I'm gonna have to watch out - my kids are getting to have better social lives than Cody and I.
